In order to bear the Appellation
d’Origine Contrôlée Cognac, the eaux-de-vie must be the result of the double distillation of wine in a Charentais pot still, the wine coming from specific areas of the cognac region which covers much of Charente and Charente Maritime.
The eaux-de-vie must then be aged in oak barrels for a minimum of two years.
