Usually the eaux-de-vie are matured in oak barrels burnt very slightly. For this limited edition, the eaux-de-vie will finish their ageing in oak barrels intensely burnt. The action of burning the oak barrels from the inside to release aromas is called the « Bousinage ».

Tasting notes

The nose, at first vivid and full-bodied, has candied-fruit notes (apple, apricot and bush peach) framed by honey and a hint of brioche. The fruit character then gives way to attractive aromas of almond and roasted nuts, accentuated by the intense heat finish.

On the palate, the attack is rounded and generous with candied flavors. Delicate vanilla notes together with a nicely integrated touch of wood combine harmoniously with notes of candied fruit.

SIGNATURE COCKTAIL

Martell has collaborated with mixologist Clothilde Lataille to craft the Intense Heat signature cocktail.

  • Pour 50ml of Cordon Bleu Intense Heat in a stirring vessel, add 5ml of burned lavender syrup.
  • Stir until perfect temperature and dilution.
  • Then pour over a big ice cube into a rock glass.
  • With a small blow torch burn for 10 seconds a dry orange wheel on your serving tray.
  • Then attach the orange to the side of the glass with a mini peg.
  • Present the glass on the tray and enjoy.
