Bar tools 1 jigger, 1 shaker, 1 fine strainer, 1 strainer, ice cubes
Garnish with an edible blue swift emblem. Serve in a coupette glass.
Pour all the ingredients inside the mixing glass.
Stir for 30 seconds making sure that the caster sugar will be dissolve properly.
Crack 1 egg, separate the yolk from the whites. Add the egg white into the mix and cover.
Do a dry shake (shaking the mixing glass without ice to create the foam from the egg white) for 10seconds. After the dry shake add the ice and shake vigorously.
Double strain in a chilled cocktail glass.
Top with the rice paper garnish (can be left out for home version).
