    What you need

    Ingredients

    Cocktails for:
    1 person
    • 30 ml
      Martell VS or Noblige
    • 30 ml
      Grapefruit-clove-cinnamon syrup
    • 100 ml
      Grapefruit juice (for syrup)
    • sugar (for syrup)
    • 2 unit
      Cloves
    • 1 stick
      Cinnamon
    • 75 ml
      Champagne
    • 1 dash
      Absinthe (for a twist)
    • 1 slide
      Lemon zest (garnish)

    Instructions

    • 1Put the grapefruit juice and spices in a saucepan over low heat, bring to a simmer, set aside for 1 hour, filter. Add half the weight of liquid (once dissolved) in sugar (2 parts juice to 1 part sugar) and stir until completely dissolved.
    • 2Pour all the ingredients into a glass filled with ice cubes.
    • 3Stir with a barspoon.
    • 4Top with champagne.
    • 5Squeeze and add lemon zest for garnish.
    • 6Add a dash of absinthe (for a twist)
    • 7Taste

    Serving tips

    Serve in a champagne coupe
