Chemical Reactions: Interaction with oxygen and oak alters the spirit’s molecular structure, softening its texture and enhancing its balance.
Sensory Evolution: Over time, cognac develops layers of aromas, ranging from fruity and floral to rich, spicy, and woody.

The Role of French Oak
The oak barrels used in aging are vital to the character of cognac. Maison Martell exclusively employs fine-grained French oak, ensuring precision and refinement in flavor. The role of oak includes:
New Oak: Rich in tannins, imparting intense woody and spicy notes.
Aged Oak: Contributes subtler flavors, allowing delicate aromas to shine.

Aging Milestones and Classifications
Cognac’s aging process is governed by the AOC (Appellation d’Origine Contrôlée) system, ensuring quality and authenticity. The classifications and their characteristics are:
VS (Very Special): Minimum 2 years of aging. Offers vibrant and fresh flavors, ideal for cocktails. Example: Martell VS.
